Recipe - Weetbix Slice

AUSSIE KIDS, ARE WEETBIX KIDS, AUSSIE KIDS……ARE WEET….BIX…KIDS!!!

An oldie but a goodie, You can’t beat the classic weetbix slice covered in chocolate.

Weetbix slice is one of those slices that’s great to pop into lunch boxes or enjoy as a sneaky snack packed with the goodness of weetbix, it’s also one that’ll become a family favourite - if it’s not already.

Prep time: 10 mins - Cooking Time: 20 mins - Ready in: 45 mins


Makes: 32 serves - Cost: $18.22 or 56 cents per serve


Ingredients

  • 3 Weetbix crushed

  • 1 cup S.R. Flour

  • 1 cup Coconut

  • 1 tbsp Vanilla Essence

  • 1/2 cup Sugar

  • 1 tbsp Cocoa

  • 155 grams Butter melted

  • 125 grams Chocolate melted

  • 1 tsp Oil

Directions

  1. Preheat oven 180°

  2. Line baking tray with baking paper

  3. Mix all dry ingredients together, melt butter for 2 minutes in the microwave

  4. Add remaining ingredients, mix until combined and moist

  5. Pour onto tray and press firmly into tray

  6. Bake for 20 minutes

  7. Melt chocolate for 2 minutes in the microwave, stir in oil until combined

  8. Pour chocolate on top of the slice, you can sprinkle desiccated coconut or 100s and 1000s on top then refrigerate

  9. Slice once chilled, freeze some for another day or to add to lunch boxes

Tips

Use Gluten Free weetbix and flour for a GF Slice,

Use Coconut oil to replace butter for dairy free version.

Add nuts, sultanas, cranberries to increase nutritional value.
